Make sure you don't transfer between containers unnecessarily.
High-quality vinegar lasts indefinitely, but its flavor will change over time. Fresh vinegar provides the cleanest flavors. Aged vinegar has a richer, more pronounced umami flavor. I like 2-year-old vinegar for dressings. Health benefits remain the same regardless of age.
Recognize spoilage signs that require disposal. If food has mold on it, it has become contaminated due to improper storage or handling. A foul odor, in addition to the smell of vinegar, indicates possible spoilage. A slimy texture indicates bacterial entry. These conditions occur only when the food has been extremely neglected.
