Properly stored miso retains both its flavor and health benefits. As a fermentation specialist with a collection of miso crocks dating back more than a decade in my cellar, I know that storage directly affects probiotic viability. The storage methods you choose will determine whether these beneficial cultures remain active or deteriorate. Proper procedures provide the upkeep of nutritional value for months or years.

Store opened miso paste in the refrigerator after use. Cover it with plastic wrap, placing the wrap directly against the surface of the miso before covering the jar. This will prevent oxidation, which destroys the probiotics. The miso should be kept in the coldest part of the refrigerator, away from the door. Refrigeration at a constant temperature of between 34 and 38°F will ensure better preservation of miso.

Surface protection is vital for maintaining the integrity of miso over time. Oxygen causes the decomposition of beneficial enzymes and probiotics. Always press parchment or plastic wrap against the paste before sealing again. Wipe the rim of the container clean to ensure an airtight seal. These simple steps can add months to your active life with miso.

Freezing techniques are appropriate for those needing to store food for long periods of time. Mound tablespoons of red miso on parchment and freeze until set, then transfer to bags. For dashi broth, use ice cube trays and store in containers. Frozen miso is suitable for over a year when properly wrapped.

Never allow any temperature variations which will destroy the probiotics. Do not leave miso on the countertop after you have used it. Please keep it away from the [heat of the] oven and direct sunlight. While I was in Kyoto and working as an apprentice, we kept miso in separate fermentation cellars. Reproduce it with a well-regulated refrigerator at home.

Observe your miso for quality issues. The fresh paste should have a sweet and earthy aroma. Throw it away if you detect any notes of sour vinegar or any molds, except for surface discoloration. The texture should be spreadable, not dried or crystallised. Trust your senses for determining freshness.
